Cellular agriculture, also called lab-grown food, promises to provide alternative food options to current agriculture practices. Cellular agriculture is food grown in laboratories and bioreactors rather than on fields, relying on cultivation of cells under controlled conditions, with minimal use of natural resources and lower greenhouse gas emission costs than in traditional practices. It gives us the prospect of consuming the same foods such as a dairy ice cream or a burger. And it can further broaden the variety of textures, flavors, nutrition, and health-promoting aspects that food can deliver. Cellular Agriculture: Lab-Grown Foods gives an overview of the broad range of approaches to cellular agriculture, the current state of scale and regulations, and the results it brings about in terms of environmental footprint and consumer attitudes. Cellular Agriculture: Lab-Grown Foods was organized by Solar Foods, a food-tech company that develops a cell-based food protein produced from CO2 and electricity. A fruitful collaboration with VTT Technical Research Center of Finland Ltd allowed conceptualizing and streamlining of the written and visual content in the book.

Cellular agriculture refers to a suite of technologies for using cell cultures and advanced fermentation instead of live animals (e.g., livestock, poultry, fisheries) to produce food for human consumption. Cellular agriculture is positioned to drive significant changes across the food system. While there is much and growing interest in this area of research, a focused and in-depth, critical examination of the social implications surrounding this emerging technology remains underdeveloped. Social science research that assesses the degree to which these technologies both alleviate and reproduce existing social and ecological problems is therefore needed. This Research Topic will feature research that responds to this need. We seek empirical, theoretical, and analytical papers that address the social, political, ethical, and cultural implications of cellular agriculture. Ideally, these papers will examine the prospects of cellular agriculture as a vehicle for, but also a potential hindrance to, social and ecological sustainability and justice. We welcome disciplinary, interdisciplinary, and transdisciplinary submissions of conceptual and empirical research articles, reviews, and commentaries from within and beyond geography, sociology, economics, urban studies, philosophy, political economy, and political science. We also seek work resulting from transdisciplinary collaborations that extend beyond the academy.

Cellular agriculture stands at the frontier of food science, challenging conventional agriculture by harnessing the power of biology and engineering to cultivate real animal products from cells rather than entire animals. "Cellular Agriculture: A Simple Guide to Big Ideas" offers an accessible, yet comprehensive introduction to this dynamic field, guiding readers through its historical evolution, essential concepts, and rapidly advancing technologies. With clear explanations and thoughtful insights, the book demystifies the science of cell cultivation, tissue engineering, and genetic innovation, creating a foundation for understanding the future of sustainable food. The guide delves deep into the multifaceted applications of cellular agriculture—from cultivated meats, dairy, and eggs to an array of non-food materials such as leather and gelatin. Through real-world case studies and analysis, the book highlights how these innovations are already influencing the marketplace, offering potential solutions for personalized nutrition, allergen-free foods, and animal welfare. It examines every step of the production process, from lab-scale cell cultures to industrial bioprocessing and quality control, emphasizing both the opportunities and challenges of scaling up. More than a primer on technology, this book situates cellular agriculture within the broader context of environmental impact, market economics, culture, and ethics. Readers gain a nuanced view of resource use, greenhouse gas emissions, and the quest for a circular economy, along with the shifting societal, regulatory, and policy landscapes that shape the industry’s growth. "Cellular Agriculture: A Simple Guide to Big Ideas" is an indispensable resource for anyone seeking to understand the possibilities and responsibilities at the intersection of innovation, sustainability, and the future of food.
